Tonight for dinner I made Summer Squash dish inspired by Colleen Patrick-Goudreau’s Color Me Vegan (pg 90). I used some amazing home grown squash supplied by Randy and Kathleen and our own cherry tomatoes from the garden. Very good. It could have used more of the toasted pine nut and nutrtional yeast crust.
